Hi everyone! What's up, It's Mishty, and welcome back to my blogging page. So, Finally, I have posted a recipe that you guys were asking me to make and post for a long time.... Mango Tea Cake! Actually, whenever I decided that I will make Mango cake, I always find another recipe much better than that, and forget to make that, since people are messaging me on Instagram, Youtube, and Facebook to post this recipe, I posted it, HEY!!! Sorry for posting this late. So I have not used whipping cream for this recipe as this is a tea time cake, but, you can also use the whipping cream if there is some kind of celebrations like a birthday or anniversary. And mostly we mango lovers, YES! I am a mango lover, we find it really interesting to post Mango Recipes, if you see my Post which  I had posted Earlier- Four easy summer special drinks I had included Aam Panna in it, too. So now without further ado, I present to you, how to make: Mango Tea Cake

YOU CAN INCREASE AS WELL AS DECREASE THE QUANTITY ACCORDINGLY.  IF YOU'RE USING MANGOES THAT ARE TOO SWEET, THEN DECREASE THE QUANTITY OF SUGAR. IF YOU WANT THE STEP-BY-STEP EXPLANATION WITH THE VIDEO, CLICK ON THE VIDEO LINK GIVEN BELOW.

Ingredients:

  • 2 cup chopped mangoes
  • 360 grams of sugar ( 1.5 cups)
  • 1 cup oil
  •  few drops of yellow food coloring (optional)
  • 1 teaspoon lime juice (for flavor, or it's optional but boy I say it taste literally great with lemon)
  • 1 cup wheat flour + 1 cup all-purpose flour (HEY!! TO MAKE IT HEALTHY!)
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • a pinch or salt
  • 1/4th cup milk

Instructions:
  • Blend the mangoes and the sugar in a blender
  • After blending, remove the puree in a bowl
  • Then add in oil, food coloring (optional) 1 teaspoon lime juice, and mix it well, (you can skip the lime juice but you will be really pleased to have the cake if you put in the lime juice, bro the taste comes differently, it's literally amazing)
  • After mixing it well check the consistency if it's proper or not ( check the consistency of my batter in the video, link below.
  • Then add the flours, baking powder, baking soda, salt, and mix it well, after some time, use the cut and fold method.
  • Then add 1/4th cup of milk, if youre batter is in the proper consistency then you dont need to add milk.
  • After the batter is ready, add it in a lined with parchment and greased with oil cake tin, and bake it at 180 c for 30-40 minutes.
  • Yaay!! the cake is ready!!!
