Today I am going to show you how to make something you will really be craving at the moment which is- Delicious Veg Mumbai street food- Aloo Frankie, I bet that you'll be wanting to have this just by looking at the picture given above, but don't worry, I am here to give you the best, step-by-step explanation on how to make Aloo Frankie. There are many types of Frankies like Sechwan Frankie, aloo Frankie, paneer Frankie, etc.  Frankie recipes are one of the versatile and popular recipes, especially with younger generations. it’s versatile because of the variations it has to offer by mix and matching its stuffing. one such simple and effective stuffing combination is aloo paneer Kathi roll loaded with grated cheese. So let's not waste time and let's start preparing the dish.


Ingredients (For the dough):

  • Maida- 2 cups
  •  Wheat flour- 1/2 cup
  •  Vegetable oil- 2 tablespoons
Ingredients (For the filling):
  • Ginger garlic paste- 2 tablespoons
  •  Finely chopped chilli- 2 nos
  •  Tomato sauce- 4 tablespoons
  •  Mashed potatoes- 9 nos
  •  Garam masala- 2 teaspoons
  •  Corriander powder- 1 teaspoon
  •  Red chilli powder- 1 teaspoon
  •  Hing- 1/2 teaspoon
  •  Cooking oil- 3 tablespoons
  •  Corriander leaves- 2 tablespoons
  •  Salt- as per taste
Ingredients (for making the Frankie masala):
*YOU CAN USE STORE BROUGHT FRANKIE MASALA IF YOU WANT*
  • Dry coriander seeds-  3 tablespoons
  •  Cumin seeds- 2 tablespoons
  •  Black pepper- 1 tablespoon
  •  Chilli powder- 2 teaspoon
  •  Garam Masala- 1 teaspoon
  •  Chat masala- 1 teaspoon
  •  Hing- 1 teaspoon
  •  Turmeric Powder- 2 teaspoon 
  •  Salt- as per your taste
Ingredients (for seasoning):
  •  Onion- 1, sliced
  •  Green pepper- 1, sliced
  •  Chilli vinegar- 2 tablespoons
Instructions:
 First, let's make the Frankie masala, The Frankie masala brings flavour to the Frankie, so don't skip this. If you want you can use store brought Frankie masala. In a big pan, add 3 tablespoons of coriander seeds, 2 tablespoons of cumin seeds, 1 tablespoon of black pepper, 1 teaspoon of carom seeds, and roast it for a while. Then add 2 teaspoons of turmeric powder, 1 teaspoon of chat masala, 1 teaspoon of garam masala, 1 teaspoon asafoetida, 2 teaspoons red chilli powder, 1 and 1/2 teaspoon black salt, and roast it till it releases the flavour.
 After it's roasted well, grind it into a fine powder. Store it in an airtight container for 5-6 months. Now let's make the dough. In a big bowl, add 2 cup all purpose flour, 1/2 cup wheat flour, and add water in batches, and start kneading the dough. So once the dough is ready, add 3 tablespoons of vegetable oil and knead it for 2 minutes again, and keep it aside for half an hour.
 Till then make the filling for the Frankie. In a big pan, add 3 tablespoons of oil, 2 tablespoons of ginger garlic paste, 2 finely chopped green chillies, 1 teaspoon coriander powder, 1 teaspoon red chilli powder, 1/2 teaspoon asafoetida, 4 tablespoons of chilli tomato sauce, and cook this nicely. Then add 9 small, mashed potatoes, 2 teaspoon garam masala, and mix it well. then add salt as per taste and mix everything together. So the pattice mix is ready, till it's cooling down, make the tortillas for the Frankie. 
Take the dough which you had kept aside for half an hour, and make small balls out of it. Then roll all the balls into a tortilla using a rolling pin. Make sure that your tortillas aren't TOO thin. After making the tortillas, apply butter in a pan cook the tortillas on bot the sides, but make sure that you cook only half not full, or in simple words, usko kaccha rakhna, usko Pura mat pakana. 
Once all are done, keep the tortillas aside on a plate. Then apply butter in a pan and shallow fry the pattice which we had prepared. Make them in a long oval shape as if it was the stuffing of a hot dog. Cook them nicely from both sides till they are crispy. After it's done, cook the tortillas fully from both sides, After it's done, start assembling the Frankie. Mix equal amounts of mayonnaise and chilli sauce, and spread it nicely over a tortilla. Then place the prepared pattice and add sliced vegetables of your choice, I am adding sliced onion and capsicum. Then add 2 tablespoons of chilli vinegar on top of it. Then sprinkle some Frankie masala all over the tortilla. Then add finely chopped coriander leaves on top of it. And then add the thing which you will really be awaiting for- GRATED CHEESE!! Then Finally, roll the tortillas nicely and give it a good presentation. It's ready!! Cravings Full Filled😍
